			<content:encoded><![CDATA[<p>Truffles are wonderfully decadent treats. Made of chocolate and other delicate flavours, they are made to entice the taste-buds. Champagne truffles have a fantastic flavour all of their own and melt on the tongue. Many recipes are easily found to make them, however not all of these can take into account those on a dairy free or vegan diet.</p>
<p>Below is one vegan recipe that has been tested and makes about 40 &#8211; 50 truffles.</p>
<p>3 cups powdered sugar.</p>
<p>3 cups icing sugar, or powdered sugar.</p>
<p>12 oz vegan chocolate, preferably semi-sweet. This is available in health food stores.</p>

<p>Toppings such as cocoa powder, coconut, chopped nuts.</p>
<p>First get water boiling in the bottom of a double saucepan. Then melt the chocolate in the upper pan, making sure that no water gets into it. This would make the chocolate become grainy and sour tasting.</p>
<p>Next take the cream cheese and blend it until it is smooth. Gradually add the confectioners sugar until well combined. Do not add too much sugar in one go, or the mixture will become lumpy and hard to work. Use a blender or a good whisk if you prefer.</p>
<p>Slowly add the melted chocolate into the cream cheese. Also add the champagne or other flavouring at this time. Mix until combined.</p>
<p>Refrigerate for roughly an hour until it has become the typical truffle consistency.</p>
<p>Keeping your hands clean, roll about a tablespoon of the mixture into round balls. Once shaped into a ball, roll the truffle in the topping you have chosen. These should be set onto separate plates or bowls so that they do not mix together. The choice of toppings is endless, though the most traditional is cocoa powder.</p>
<p>Either use a pretty plate or small paper cups to serve the truffles. They can be placed in a fridge for up to two weeks or frozen for longer periods.</p>
<p>Home made truffles make wonderful gifts. To do this, find a small, pretty box and line it with wax paper. Place the champagne truffles into the box. The small paper cups work well for this since they prevent the chocolate from sticking to each other.</p>

<p>Eliminating eggs</p>
<p>It is not as simple as not eating eggs. Eggs make up a large amount of foods that you may be unaware of. First is egg substitutes found in your grocery store. This ingredient may be added to recipes in some cases. For baking you can buy natural egg replacement products. You may have to go to a health food store. Look for tapioca flour and potato starch as the main ingredients. Many baking recipes call for eggs. These products will work for baking.</p>
<p>Flax-seeds can be used to substitute for eggs. They will work well as an ingredient binder in recipes. One tablespoon of flax-seeds can be mixed with three tablespoons of water. Place them in a blender or food processor and mix until smooth. This will equate to one egg. Avoid Gelatin because it is made out of animal by-products such as cows&#8217; and pigs&#8217; skin, tendons, ligaments and bones.</p>
<p>You can use other things as recipe binders, also. Whenever you bake cookies, cakes, muffins, or cornbread, you will need a binder. Tofu is another way to substitute eggs. Use one fourth of a cup for an egg. If you mix one teaspoon of yeast with one fourth cup of water, you can make one egg. Another method is one teaspoon of potato flour and one teaspoon of water. Some of these substitutes may affect the flavor of your dishes. You may need to test them to find out. Avoid Gelatin because it is made out of animal by-products such as cows&#8217; and pigs&#8217; skin, tendons, ligaments and bones.</p>
<p>Meat substitutes</p>
<p>There are many sources that you can get the necessary protein for your body. Nuts have a lot of protein within them. If you eat them regularly, you will increase your good protein intake. Use them in some of your favorite recipes, or just eat them as snacks.</p>
<p>Legumes are another good source of protein. Foods like lentils, kidney beans and split peas fall into this category. You can use them in main dishes. They can be put into chili and other main dish recipes. Try using them, as you would meat. They may be a good alternative, as well as a protein source.</p>
<p>Corn and beans are a good source of protein. When you mix them together, they become a complex protein. This is a good meat substitute. This will also work with rice and beans. Bread and peanut butter are also a good combination.</p>
<p>Soybeans make an excellent protein source and meat replacement. You will find much of it in the form of tofu. It is also promoted as good for cholesterol. You can buy soybeans at your local health food store. They come roasted and salted as peanuts.</p>

			<content:encoded><![CDATA[<p>The grapefruit diet is one of the earliest known Hollywood fad diets. It first came to fame in the 1930&#8242;s when many stars used it. It became part of photocopy lore, faxed from machine to machine, in the 1970&#8242;s. The diet has been described as bad by the Mayo Clinic, often associated with the diet.</p>
<p>Originally the grapefruit diet was an Atkins style diet that added one half grapefruit before each meal. The diet only allows three meals each day, with no snacking in between meals. The diet claimed that people could lose 10 pounds in 10 days, or 5 pounds in five days. The distribution was just as far fetched, no weight loss for four days then five pounds lost all on the fifth day. It was based on the claim that grapefruit contains fat burning enzymes, something that has never been proven.</p>
<p>Researchers showed that the diet may work in a 2004 study. Eating just ½ grapefruit prior to meals helped people in the study lose 3.6 pounds in twelve weeks. Drinking the juice from the grapefruit led to only slightly less weight loss. Many of the participants lost more than 10 pounds in 12 weeks. The doctor who conducted the study found that the grapefruit diet seems to reduce levels of insulin. But the study didn&#8217;t limit people to just diet, they also exercised more which may have resulted in the weight loss.</p>
<p>Here&#8217;s a typical grapefruit diet:</p>
<p>- Eight 8 ounce glasses of water each day, this is a must.<br />
- Eat until full.<br />
- Eat all the food listed at each meal, skipping food interferes with fat burning.<br />
- Grapefruit is the key  so eat that as specified.<br />
- Try to avoid coffee, but if drunk consume only three cups a day.<br />
- No snacking.<br />
- Butter is OK.<br />
- Avoid sweets and starches such as bread and potatoes.<br />
- Protein and vegetables are fine.<br />
- Eating more will actually result in more weight loss.<br />
- Follow the diet for 12 days, skip two days, then start again.<br />
- Grapefruit with each meal is ½ or 18 ounces of juice.</p>

<p>1/2 cup whole wheat flour (I used white whole wheat flour)<br />
1/2 cup unbleached flour<br />
1/4 cup rolled oats<br />
1/2 teaspoon baking soda<br />
1 teaspoon cinnamon<br />
1/2 teaspoon ginger<br />
1/4 teaspoon nutmeg<br />
1/4 teaspoon salt<br />
1/2 cup agave nectar<br />
1/2 cup canned pumpkin<br />
2/3 cup okara (or 8 ounces firm tofu, blended in a food processor until smooth)<br />
1 teaspoon vanilla extract<br />
1 tablespoon turbinado sugar &#8212; or icing, below</p>
<p>Preheat oven to 375F.</p>
<p>Mix the flours, oats, baking soda, spices, and salt in a mixing bowl. Mix the agave nectar, pumpkin, okara (tofu), and vanilla in another bowl. Add the wet ingredients to the dry and stir just until well-blended. Do not over-stir.</p>
<p>Use a cookie scoop or tablespoon to drop rounded tablespoons of dough at least two inches apart on a baking sheet lined with a silicone baking mat or parchment paper. Flatten each cookie slightly with a fork. Sprinkle with turbinado sugar, if desired. Bake for 10-16 minutes or until edges are golden and middles seem done. Remove from oven and allow to cool for 5 minutes before transferring each cookie to a wire rack. Allow to cool completely before serving.</p>
<p>Optional icing:</p>
<p>1 cup confectioners&#8217; sugar<br />
2 teaspoons agave nectar<br />
2 teaspoons non-dairy milk<br />
1/4 teaspoon vanilla extract or other extract (I used pecan)<br />
food coloring (optional)</p>
<p>In a small mixing bowl, add the agave nectar, milk, and extract to the confectioners&#8217; sugar. Add additional milk a half-teaspoon at a time, stirring constantly, until the icing is smooth and spreadable but not so thin that it runs off. If you add too much milk, add a little more sugar to balance it out. Add food coloring a drop at a time until the right color is achieved. Spread over cooled cookies and allow to dry.</p>
<p>Makes about 15 cookies. Per cookie (with sugar, no icing) : 76 Calories (kcal); trace Total Fat; (3% calories from fat); 1g Protein; 18g Carbohydrate; 0mg Cholesterol; 78mg Sodium; 1g Fiber. Weight Watchers: 1 Point.</p>

2 T. safflower oil<br />
1 T. curry powder<br />
2 t. ginger, minced<br />
1/4 cup sherry<br />
3 lbs. cooking apples of choice, peeled, cored, and diced<br />
4 cups vegetable stock<br />
1 cup apple juice<br />
1 cup soy milk, <a href="http://www.veganchef.com/sweetapple.htm">Sweet Apple Cider-Nut Milk</a>, or other non-dairy milk<br />
1-2 T. lemon juice<br />
salt and pepper, to taste</p>
<p><strong>Directions:</strong></p>
<p>In a large pot, saute the shallots in oil for 5 minutes or until soft. Add the curry powder and ginger, and saute an additional minute. Add the sherry, and stir well to deglaze the pot. Add the diced apples, vegetable stock, and apple juice, and bring the mixture to a boil. Cover, reduce the heat to low, and simmer for 20-25 minutes or until the apples are tender. Remove from the heat and allow to cool for 10 minutes. In a food processor or blender, in batches, puree the soup until smooth, and return the soup to the pot. Whisk in the soy milk, a little of the lemon juice, and season to taste with salt and pepper. If desired, add additional curry powder, apple juice, or lemon juice to the soup to adjust the sweetness or spicy flavor of the soup to your own personal taste. Serve hot or cold.</p>
