<p>In addition to B-12 and many other nutrients, one of the other vitamins that vegans need is L-Carnitine, an amino-acid derivative that helps convert stored fat tissue into energy by transporting it into cells where the fat is burned.</p>
<p>If you&#8217;re an overweight vegan, you are likely surprised as to why someone who doesn&#8217;t even eat any animal products &#8211; well known for creating poor digestion, let alone other health complications due to all the hormones and synthetic chemical products added to livestock diets in order to fatten them up for ideal selling weights &#8211; why someone who doesn&#8217;t even eat flesh might not be losing weight as easily as you thought.  Going vegetarian or vegan, you&#8217;ve learned, certainly isn&#8217;t necessarily the ticket to weight loss.</p>
<p>You probably have an L-Carnitine deficiency if you&#8217;re an overweight vegan (and assuming you&#8217;re not the type to have loaded up on junk foods and other processed items).  Moreover, if you&#8217;ve been a vegan for more than 5 years or so, you have probably used up whatever leftover amounts of carnitine was in your body from the time when you still ate meat.  This mean that your body has probably been having a hard time synthesizing its own carnitine and as a result you may have lots of excess fatty tissue that hasn&#8217;t been metabolized.  </p>
<p>Could it really be as simple as taking some L-Carnitine supplements?  Initial studies suggest so, although more studies need to be done to confirm it.  Either way, it&#8217;s certainly not bogus.  Carnitine has many benefits, and fat oxidization is just one.  </p>
<p>A good suggestion is to start with 1000mg of carnitine supplements per day, then work your way up to 2000mg a day.  After that you can experiment up to 5000mg a day, but no more.  There are no known toxic side effects with carnitine.</p>
<p>L-Carnitine might be the missing link for overweight and confused vegans.  If you&#8217;re confused you should check with your own healthcare provider before adding supplements to your regimen, especially if you are taking other medications, which might have interactions.</p>

			<content:encoded><![CDATA[<p>Truffles are wonderfully decadent treats. Made of chocolate and other delicate flavours, they are made to entice the taste-buds. Champagne truffles have a fantastic flavour all of their own and melt on the tongue. Many recipes are easily found to make them, however not all of these can take into account those on a dairy free or vegan diet.</p>
<p>Below is one vegan recipe that has been tested and makes about 40 &#8211; 50 truffles.</p>
<p>3 cups powdered sugar.</p>
<p>3 cups icing sugar, or powdered sugar.</p>
<p>12 oz vegan chocolate, preferably semi-sweet. This is available in health food stores.</p>
<p>12 oz vegan semi-sweet chocolate (Available in health food stores.)</p>
<p>Toppings such as cocoa powder, coconut, chopped nuts.</p>
<p>First get water boiling in the bottom of a double saucepan. Then melt the chocolate in the upper pan, making sure that no water gets into it. This would make the chocolate become grainy and sour tasting.</p>
<p>Next take the cream cheese and blend it until it is smooth. Gradually add the confectioners sugar until well combined. Do not add too much sugar in one go, or the mixture will become lumpy and hard to work. Use a blender or a good whisk if you prefer.</p>
<p>Slowly add the melted chocolate into the cream cheese. Also add the champagne or other flavouring at this time. Mix until combined.</p>
<p>Refrigerate for roughly an hour until it has become the typical truffle consistency.</p>
<p>Keeping your hands clean, roll about a tablespoon of the mixture into round balls. Once shaped into a ball, roll the truffle in the topping you have chosen. These should be set onto separate plates or bowls so that they do not mix together. The choice of toppings is endless, though the most traditional is cocoa powder.</p>
<p>Either use a pretty plate or small paper cups to serve the truffles. They can be placed in a fridge for up to two weeks or frozen for longer periods.</p>
<p>Home made truffles make wonderful gifts. To do this, find a small, pretty box and line it with wax paper. Place the champagne truffles into the box. The small paper cups work well for this since they prevent the chocolate from sticking to each other.</p>
